3 Delicious Wraps

These wraps will make lunch a breeze.

Ingredients

  • 2 avocados
  • ½ clove of garlic
  • 2 tablespoons cilantro
  • Juice of 1 lemon
  • ½ cup oil
  • Salt
  • 1 chicken breast, shredded
  • Pita bread
  • Arugula

Steps

  1. Blend the avocado, garlic, lemon juice and cilantro until you have a smooth mixture.
  2. Gradually add the oil until it becomes mayonnaise. Add salt.
  3. Mix the avocado mayonnaise with the shredded chicken.
  4. Place a serving of chicken on the pita, add the arugula, roll up, and cut.
  5. Serve with salad.

Ingredients

  • Olive oil
  • 400 g boneless beef shoulder clod cut into cubes
  • 1 onion cut into cubes
  • 3 cloves of garlic
  • Salt to taste
  • Black pepper to taste
  • ½ cup dry red wine
  • 2 tablespoons tomato purée
  • 1¾ cups beef stock
  • ¼ bunch of parsley, chopped
  • Pita bread
  • Grated mozzarella cheese

Steps

  1. Add olive oil to a heated pot and fry the beef.
  2. Add the onion and garlic, and sauté well.
  3. Season with salt and pepper, add the red wine, and let the alcohol evaporate.
  4. Add the tomato purée and the beef stock. Place the lid and leave to cook for approximately 40 minutes or until the beef is very tender. Push down on the beef with a spoon to break it apart.
  5. Add the chopped parsley and leave to cool.
  6. Place a serving of stewed beef on the pita, add the mozzarella cheese, roll up, and bake at 360 °F for 10 minutes.
  7. Cut and serve with salad.

  • 4 tablespoons of olive oil
  • 1 diced onion
  • 1 clove of crushed garlic
  • 2 diced eggplants
  • 1 diced red pepper
  • 1 diced yellow pepper
  • 50 g of sliced green olives
  • 2 tablespoons of white raisin
  • 2 tablespoons of tomato paste
  • 2 tablespoons of white wine vinegar
  • 1 bunch of fresh thyme
  • Salt
  • Black pepper
  • Pita bread
  • Arugula

Steps

  1. Heat the oil and brown the onion and garlic.
  2. Add the eggplant, red and yellow peppers and sauté.
  3. Add the olives, raisins, tomato paste, vinegar and thyme, mix well and cook for approximately 15 minutes.
  4. Season with salt and pepper.
  5. Arrange a portion of caponata on pita bread, add the arugula, wrap it, cut and serve with salad.
