3 Ways to Use Salsa

Mac 'n' cheese? Sloppy Joes? Chicken Salad? You bet!

Ingredients

  • 1/4 cup chunky salsa
  • 12 ounces cooked chicken breast, diced
  • 1/3 cup mayo
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper
  • Tortilla
  • Green leafy lettuce
  • Diced red pepper
  • Diced avocado

Steps

  1. Combine salsa, chicken breast, mayo, cilantro and salt and pepper in a mixing bowl.
  2. Assemble the wrap - Start with the tortilla, add lettuce, drop in a few spoonfuls of salsa chicken salad, add diced red pepper and avocado. Wrap and enjoy!

Ingredients

  • 2 tablespoons butter
  • 1/4 cup flour
  • 2 cups milk
  • 2 cups salsa
  • 2 cup shredded cheddar
  • 1 pound elbow macaroni, cooked
  • 1 can black beans, drained
  • 1 can corn, drained
  • 3 jalapeños, diced

Steps

  1. Melt butter over medium heat, add flour and whisk until everything comes together.
  2. Pour in the milk and continue to stir until the flour/butter dissolves. When the sauce has thickened, lower the heat.
  3. Add the salsa, cheese, cooked macaroni, black beans, corn and jalapeños. Stir to make sure everything is well incorporated.
  4. Serve with extra shredded cheddar and jalapeños (optional).

Ingredients

  • 1 pound ground beef
  • 1 1/3 cups salsa
  • 1 tablespoon brown sugar
  • 1 tablespoon tomato paste
  • 1/2 cup water
  • Hamburger buns
  • Shredded cheddar

Steps

  1. Cook beef over medium heat until all of the pink is gone. Remove with a slotted spoon and drain the grease.
  2. Return the the ground beef to the pan. Stir in salsa, brown sugar, tomato paste and water. Simmer for 10 minutes or until the sauce has reduced and thickened.
  3. Serve on buns with shredded cheddar. Enjoy!
