The super trendy, colorful and sweet purple yam, ube, is great as a coffee cake, gooey bar or even in a milkshake.

Ingredients

Purple Yam Jam

  • 1 cup mashed purple yam
  • 1/4 cup sugar
  • 1/2 cup coconut milk
  • 1/2 cup sweetened condensed milk

Milkshake

  • 1/2 cup purple yam jam
  • 3 scoops vanilla ice cream
  • 2 cups ice
  • 1/2 cup coconut milk

To Garnish

  • Tuile cigar cookies
  • Fresh whipped cream
  • Purple yam powder (optional)

Steps

Purple Yam Jam

  1. In a large saucepan over high heat, stir together mashed purple yam, sugar, coconut milk and sweetened condensed milk. Bring to a boil.
  2. Reduce heat to low and cook for another 15 minutes, stirring frequently.
  3. Pour into jar and set aside to cool.

Milkshake

  1. In a blender, combine purple yam jam, vanilla ice cream, ice and coconut milk.

To Garnish

  1. Serve with a dollop of purple yam jam, whipped cream, a sprinkle of purple yam powder and finish with a tuile cigar cookie.

Ingredients

Bottom Layer

  • 2 cups flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1 egg

Top Layer

  • 2 cups mashed purple yam
  • 8 ounces cream cheese, softened
  • 3 eggs
  • 1/4 teaspoon vanilla extract
  • 4 tablespoons butter, softened
  • 1 1/2 cups confectioners' sugar
  • Fresh whipped cream, to garnish

Steps

Bottom Layer

  1. Preheat the oven to 350 degrees F.
  2. Prepare a 9 by 13-inch baking pan with parchment paper.
  3. Combine all ingredients.
  4. Pat the mixture into the bottom of the baking pan.
  5. Set aside.

Top Layer

  1. In a large bowl, mix together the purple yam and cream cheese until smooth.
  2. Add the eggs, vanilla and butter until well combined.
  3. Finish with the confectioners' sugar. Mix well.
  4. Spread the purple yam mixture over the cake batter and bake for 35 to 45 minutes. Don't over-bake the cake! You want a little bit of a jiggle. Set aside to cool completely before cutting and serving.
  5. Serve with fresh whipped cream.

  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/8 teaspoon salt
  • 3/4 cup coconut flakes
  • 1 cup all-purpose flour
  • 1/2 cup butter, melted

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 cup mashed purple yam
  • 1/2 cup coconut milk

Coconut Glaze

  • 1/2 cup confectioners' sugar
  • 1 1/2 teaspoons coconut milk
  • 1/4 teaspoon vanilla extract

Coconut Crumb Topping

  1. In a small bowl, combine the sugars, salt, coconut and flour.
  2. Add the melted butter and press the mix together. Set aside until ready to use.

Purple Yam Coffee Cake

  1. Preheat the oven to 350 degrees F. Prepare a 9 by 9-inch baking dish with parchment paper.
  2. In a mixing bowl, combine the flour, baking powder and salt.
  3. In a separate bowl, cream together softened butter and sugar.
  4. Beat in the eggs, one at a time.
  5. Add the mashed purple yam, and stir until well combined.
  6. Beat in half of the flour mixture, then the coconut milk. Gradually add in the remaining flour mix until well combined.
  7. Pour the batter into the prepared pan. Break the topping into big chunks and sprinkle over the batter.
  8. Bake for 45 to 50 minutes or until a toothpick comes out clean.
  9. Cool on a wire rack.

Coconut Glaze

  1. Whisk glaze ingredients together until smooth.
  2. Drizzle glaze over coffee cake before serving.

  2. Cool to room temp, then peel off the skin.

  2. Boil until yams are fork tender.
  3. Remove and cool to room temp before you peel the skin.
