Ingredients
- 4 ears of corn
- Vegetable oil
- 1/2 cup mayo
- 1/3 cup Mexican crema
- 1/2 teaspoon chili powder
- 1 cup cotija
- Pinch cayenne
- 2 limes
- Cilantro, for garnish
- Salt and pepper
Steps
- Drizzle corn with oil, and grill until charred, about 15 minutes.
- Mix mayo, crema and chili powder.
- Roll grilled corn in mayo mixture, then cover with crumbled cheese.
- Sprinkle with cayenne, cilantro and lime.
Ingredients
- 4 ears of corn
- 1 stick butter, room temperature
- 1 garlic clove, grated
- 2 teaspoons chopped thyme
- 2 teaspoons chopped basil
- 2 teaspoons chopped chives
- 1/2 lemon, zested
- 2 tablespoons salt
- 3 lemons, 1 halved
- Salt and pepper
- Parmesan
Steps
- Make the herb butter: mash softened butter with garlic, herbs and lemon zest.
- Form into a cylinder and refrigerate until firm.
- Bring a large pot of water to a bowl.
- Add salt, squeeze in lemon juice and add remaining 2 lemons, then add corn.
- Cook corn for 5 minutes.
- Serve warm with herb butter and a sprinkle of Parmesan.

- 1 tablespoon cumin
- 1 teaspoon coriander
- 1 teaspoon garam masala
- Grapeseed oil
- 1/4 cup Greek yogurt
- 2 tablespoons mango chutney
- Cilantro, for garnish

Steps
- Preheat oven to 425°F.
- Mix spices together. Rub corn with oil and coat in spices.
- Place on a sheet tray and roast for 20 minutes.
- Mix yogurt and chutney.
- Dip corn in yogurt and enjoy.

Steps
- Heat the butter in a medium-large sized pot.
- Add the onion and sauté until soft.
- In a large pot, add water, milk, honey, thyme sprigs and salt; bring to a boil.
- Add corn and cook for 5-6 minutes.
- Remove corn and serve with butter, a drizzle of honey and a sprinkle of sea salt.
