Ingredients

  • 4 ears of corn
  • Vegetable oil
  • 1/2 cup mayo
  • 1/3 cup Mexican crema
  • 1/2 teaspoon chili powder
  • 1 cup cotija
  • Pinch cayenne
  • 2 limes
  • Cilantro, for garnish
  • Salt and pepper

Steps

  1. Drizzle corn with oil, and grill until charred, about 15 minutes.
  2. Mix mayo, crema and chili powder.
  3. Roll grilled corn in mayo mixture, then cover with crumbled cheese.
  4. Sprinkle with cayenne, cilantro and lime.

Ingredients

  • 4 ears of corn
  • 1 stick butter, room temperature
  • 1 garlic clove, grated
  • 2 teaspoons chopped thyme
  • 2 teaspoons chopped basil
  • 2 teaspoons chopped chives
  • 1/2 lemon, zested
  • 2 tablespoons salt
  • 3 lemons, 1 halved
  • Salt and pepper
  • Parmesan

Steps

  1. Make the herb butter: mash softened butter with garlic, herbs and lemon zest.
  2. Form into a cylinder and refrigerate until firm.
  3. Bring a large pot of water to a bowl.
  4. Add salt, squeeze in lemon juice and add remaining 2 lemons, then add corn.
  5. Cook corn for 5 minutes.
  6. Serve warm with herb butter and a sprinkle of Parmesan.

  • 1 tablespoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon garam masala
  • Grapeseed oil
  • 1/4 cup Greek yogurt
  • 2 tablespoons mango chutney
  • Cilantro, for garnish
  • Salt and pepper

Steps

  1. Preheat oven to 425°F.
  2. Mix spices together. Rub corn with oil and coat in spices.
  3. Place on a sheet tray and roast for 20 minutes.
  4. Mix yogurt and chutney.
  5. Dip corn in yogurt and enjoy.

  • 1 cup water
  • 1/4 cup honey, plus more for drizzling
  • 5 sprigs thyme
  • 1 teaspoon salt
  • Flaky sea salt
  • Butter, for serving
  • Honey, for drizzling

Steps

  1. Heat the butter in a medium-large sized pot.
  2. Add the onion and sauté until soft.
  3. In a large pot, add water, milk, honey, thyme sprigs and salt; bring to a boil.
  4. Add corn and cook for 5-6 minutes.
  5. Remove corn and serve with butter, a drizzle of honey and a sprinkle of sea salt.
