Ingredients

  • 4 ears of corn
  • Vegetable oil
  • 1/2 cup mayo
  • 1/3 cup Mexican crema
  • 1/2 teaspoon chili powder
  • 1 cup cotija
  • Pinch cayenne
  • 2 limes
  • Cilantro for garnish
  • Salt and pepper

Steps

  1. Drizzle corn with oil, and grill until charred, about 15 minutes.
  2. Mix mayo, crema and chili powder. Roll grilled corn in mayo mixture, then cover with crumbled cheese. Sprinkle with cayenne, cilantro and lime.
