Southwestern

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1/4 cup yellow onion, diced
  • 1 clove garlic, minced
  • 1 large tomato, diced
  • 2 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 3/4 cup black beans, cooked
  • 1 7-ounce can roasted green chiles
  • 1/2 cup frozen corn, defrosted
  • 1 1/2 cups cooked brown rice
  • 1/4 cup cilantro, chopped
  • 1 red bell pepper, sliced in half
  • 1 yellow bell pepper, sliced in half
  • 1/2 cup pepper jack cheese, grated

Steps

  1. Heat oven to 400 degrees F and grease a baking dish with olive oil.
  2. Heat olive oil over medium-high heat in large skillet.
  3. Add onion, garlic, ground beef, sea salt, chili powder, and cumin and cook for 6-8 minutes, or until meat is cooked through.
  4. Add tomato, black beans, chiles, rice, cilantro, and corn, and cook for 5 minutes to heat through.
  5. Spoon the meat and rice mixture into each pepper half and place in a square baking dish. Top each with cheese.
  6. Place into oven and bake for 30-40 minutes, or until bell peppers are cooked through.
