Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • Salt to taste
  • Black pepper to taste
  • 1/3 cup cooked broccoli
  • 1/3 cup cooked cauliflower
  • 1/3 cup cooked carrot, diced
  • 1/3 cup sauteed zucchini, diced
  • 1 teaspoon chopped parsley
  • 1 teaspoon chopped scallions

Steps

  1. In a glass jar, add the olive oil, vinegar, salt and black pepper.
  2. Add the broccoli, cauliflower, carrots, zucchini, parsley and scallions.
  3. Add lid, and shake to mix well before eating.
