- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- Salt to taste
- Black pepper to taste
- 1/3 cup cooked broccoli
- 1/3 cup cooked cauliflower
- 1/3 cup cooked carrot, diced
- 1/3 cup sauteed zucchini, diced
- 1 teaspoon chopped parsley
- 1 teaspoon chopped scallions
- In a glass jar, add the olive oil, vinegar, salt and black pepper.
- Add the broccoli, cauliflower, carrots, zucchini, parsley and scallions.
- Add lid, and shake to mix well before eating.
