5 Cocktail Popsicles

Grown-up versions of your fave frozen summer treat make those hot afternoons that much more enjoyable.

Ingredients

  • Fresh orange slices
  • Champagne
  • Orange juice

Steps

  1. Place orange slices into a popsicle mold. Fill them half way with champagne and top with orange juice.
  2. Insert popsicle sticks and place in the freezer until frozen solid, about 3-4 hours.
  3. Unmold the popsicles by running the popsicle mold under warm water - make sure not to get water INTO the mold!
  4. To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!

Ingredients

  • 3 ounces Malibu rum
  • 3 tablespoons coconut cream
  • 3 tablespoons canned pineapple chunks + extra
  • 1 1/2 cups coconut milk (not coconut cream)

Steps

  1. Place all ingredients in a blender and pulse until smooth. Place the extra pineapple chunks into a popsicle mold and top with the mixture.
  2. Add popsicle sticks and place in the freezer until frozen solid, about 2-4 hours.
  3. Unmold the popsicles by running the popsicle mold under warm water - make sure not to get water INTO the mold!
  4. To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!

Ingredients

  • 2 tablespoons superfine sugar
  • 1/2 cup water
  • Orange and lime slices
  • 1/2 bottle (approx. 375 milliliters) rose, red or white wine
  • 3 ounces sparkling water
  • Fresh strawberries and raspberries

  1. Dissolve the superfine sugar in the water. Add the orange and lime slices, wine and sparkling water and mix well.
  2. Place the strawberries and raspberries into popsicle molds, then pour in the sangria. Insert popsicle sticks and place in the freezer until completely frozen, 3-4 hours.
  3. Unmold the popsicles by running the popsicle mold under warm water - make sure not to get water INTO the mold!
  4. To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!

  • 2 peaches, cut into cubes (+ sliced peach, for garnish)
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • Prosecco

Steps

  1. Place the 2 peaches, lemon juice and sugar in a blender and pulse until smooth. Divide into popsicle molds, placing about 2 tablespoons in each mold.
  2. Fill the molds the rest of the way with prosecco and add peach slices. Insert popsicle sticks and place in the freezer until frozen, 3-4 hours.
  3. Unmold the popsicles by running the popsicle mold under warm water - make sure not to get water INTO the mold!
  4. To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!

  • 1 1/2 ounces Cointreau
  • Juice from 2 limes
  • Club soda
  • Lime slices

Steps

  1. Combine the tequila, Cointreau and lime juice in a bowl. Divide between a popsicle mold, then top with club soda. Add some fresh lime slices. Insert popsicle sticks and place in the freezer until frozen, about 3-4 hours.
  2. Unmold the popsicles by running the popsicle mold under warm water - make sure not to get water INTO the mold!
  3. To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!
