One minute is all you need for this delicious no-bake cheesecake, along with a few spins on it.
Ingredients
- 1 3/4 cups digestive biscuits/graham crackers
- 3 tablespoons butter, melted
- 1 cup cream cheese
- 4 tablespoons powdered sugar
- 1 teaspoon vanilla paste
- 1/2 cup double cream
Steps
- Crush the biscuits to a fine crumb and add the melted butter.
- Stir to combine, and add the mixture to the bottom of ramekin.
- In a bowl, whisk together the cream cheese, powdered sugar and vanilla until smooth.
- Pour in the double cream and whisk to combine.
- Pour the cream cheese mixture on top of the biscuit base and serve.

- 1 cup cream cheese
- 1 lemon, zested and juiced
- Tablespoon double cream
- 4 tablespoons powdered sugar
Steps
- Crush the biscuits in a sandwich bag or with a food processor. Transfer to a bowl, and and add the melted butter. Stir to combine.
- Add a few tablespoons of the biscuit mixture to individual ramekins or glasses and flatten. Place in the fridge.
- Add the cream cheese, lemon zest, lemon juice and cream, and beat to combine. Add the powdered sugar and mix again until smooth.
- Spoon the cream cheese mixture on top of the biscuit base and garnish with some crushed biscuits and lemon zest.

- 6 ounces pretzel twists
- 2 tablespoons caster sugar
- 2-4 tablespoons butter, melted
- 1/2 cup cream cheese
- ⅜ cup smooth peanut butter
- 1/2 cup powdered sugar
- 1 cup double cream
- Reese's Pieces, finely chopped
- Chocolate sauce to garnish
Steps
- Blitz the pretzels to a fine crumb, then add in the sugar and combine. Stir in the melted butter, and press in the bottom of individual ramekins. Set in the fridge.
- Beat the cream cheese, peanut butter and powdered sugar together until smooth.
- Whip the cream to soft peaks, and fold the mixtures together along with chopped Reese's Pieces.
- Layer the mixture on top of the pretzel base and smooth it out.
- To finish, add a squeeze of chocolate sauce on top and garnish with another Reese's Piece.
