  • 4 ring doughnuts
  • 3.5 ounces chocolate, melted
  • 1 tablespoon vegetable oil
  • 1 graham cracker, crushed
  • 20 small marshmallows

Steps

  1. Split the doughnuts across the middle. Place the lids on a wire rack with a tray underneath. Mix the melted chocolate with the vegetable oil. Spoon melted chocolate onto each doughnut lid, then sprinkle the crushed graham crackers on top. Leave in the fridge for 30 minutes or until firm.
  2. When the chocolate has set, arrange 5 small marshmallows on each of the bottom halves of doughnuts. Use a blowtorch to caramelize them, then top with the chocolate lids.

  • 3 tablespoons candied peel, divided
  • 13 ounces ricotta, drained and patted dry
  • 5 ounces mascarpone
  • 3 tablespoons powdered sugar
  • 2 tablespoons dark chocolate chips

  1. Finely chop half of the candied peel. Put the ricotta into a mixing bowl and use a wooden spoon to cream it until smooth. Add in the mascarpone, powdered sugar and chopped candied peel. Mix well then transfer to a piping bag fitted with a large star tip.
  2. Slice the doughnuts in half across the middle and lay out the bottom halves on a baking tray. Pipe the ricotta filling in rounds on each of the donuts, then sprinkle over the remaining candied peel and chocolate chips. Top with the doughnut lids, and lightly dust with powdered sugar.
