Crunchy S'mores French Toast

Graham cracker and corn flake-battered brioche gets layered with gooey marshmallows, milk chocolate and syrup.


  • 2 tablespoons unsalted butter
  • 2 tablespoons canola oil
  • 1 cup graham cracker crumbs
  • 1 cup cornflakes, crushed
  • 1/2 teaspoon ground cinnamon
  • 3 large eggs, lightly beaten
  • 2 tablespoons brown sugar
  • 1 cup whole milk
  • 1/4 teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • 8 slices brioche or challah bread
  • 2 milk chocolate bars, broken into pieces
  • 12 large marshmallows, cut in half
  • Chocolate sauce and mini marshmallows, for serving


  1. In a large nonstick skillet over medium heat, melt butter and canola oil.
  2. In a shallow bowl or pie plate, combine graham cracker crumbs, cornflakes and cinnamon.
  3. In a separate shallow dish, whisk together eggs, brown sugar, milk, salt and vanilla.
  4. Dip each slice of brioche into egg mixture, then press each side into graham cracker and cornflake mixture. Cook until brown and crispy, about 3 minutes per side.
  5. While still warm, stack the slices of French toast in pairs, layering chocolate and marshmallows in between. Top with mini marshmallows, drizzle with chocolate syrup and serve.
