Frog Matcha Cream Puffs

These mini cream puffs will hop right into your mouth!


  • Cream Puff Dough:
  • 1 cup water
  • 1/2 cup unsalted butter, cut into cubes
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • Egg wash:
  • 1 egg
  • 1 tablespoon water
  • Matcha green tea powder, for dusting
  • Matcha Pastry Cream:
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • Pinch salt
  • 2 cups milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons matcha green tea powder
  • Pink candy melts
  • White chocolate, melted
  • Mini chocolate chips


  1. Make the cream puffs: In a large pot, combine the water, butter, sugar and salt. Bring to a boil and stir in the flour with a wooden spoon. Stir until a film forms on the bottom of the pan. Transfer the dough to a bowl and cool for 3-4 minutes. Add the eggs one at a time, stirring vigorously and completely incorporating each egg after each addition.
  2. Transfer the dough to a piping bag fitted with a round piping tip and pipe 1 1/2-inch rounds onto baking sheets lined with parchment paper. Wet your fingers and smooth any pointed peaks.
  3. Combine the egg and water to create the egg wash and brush onto the surface of each cream puff. Generously dust the surface with matcha green tea powder and bake at 375F for 30 minutes. Cool completely.
  4. Make the matcha pastry cream: Combine the sugar, cornstarch and salt in a pot. Add the milk, egg yolks and butter and whisk together. Set to medium heat and whisk constantly until it comes to a boil. Once it thickens, remove from the heat and add the vanilla extract and matcha green tea powder. Strain through a sieve and cover with plastic wrap, pressing it directly on the surface. Refrigerate until chilled. If the pastry cream becomes lumpy, pulse in a food processor a couple times. Transfer to a piping bag fitted with a round tip.
  5. Assembly: Slice wedges out of the sides of the cream puffs and fill them with pastry cream. Stick a pink candy melt into the pastry cream to look like tongues. Place 2 dollops of white chocolate above the mouths and stick a mini chocolate chip in the center of each to look like eyes. Enjoy!
