Guava and Chorizo Layered Dip

Ingredients

  • 2 Cuban bread rolls

  • 2 tablespoons olive oil

  • 2 cups cream cheese, room temperature

  • 1 cup guava jam

  • 1 pound Mexican chorizo, casing removed

  • 1 cup plantain chips

Instructions

  1. Preheat oven to 350 degrees. In a pan, cook the chorizo, crumbling with a wooden spoon for easier bites. Scoop out the chorizo and set aside.

  2. Slice the Cuban bread, lay out on a sheet tray and drizzle with olive oil. Bake in the oven for 5 to 7 minutes until crisp and golden brown.

  3. In a mixing bowl, add the cream cheese and guava jam. Mix until well combined and airy.

  4. In a serving bowl, add a layer of the guava cream whip, followed by chorizo and plantain chips. Repeat. Use the toasted Cuban bread as your “chip”, and enjoy this salty, sweet and crunchy combination.

- Hey, I'm Zoe Kelly, and I'm from Miami where we have a very interesting flavor combination of guava and cream cheese. Now what happens when you get guava, cream cheese, and chorizo all in one bite? This baby is what happens. Let me show you how to make it. All right, let's go ahead and get started. First, we're gonna start off by browning some chorizo, and I've removed the casing from the chorizo. While that's going, I'm gonna go ahead and make my Cuban bread crostinis. Here I have my Cuban roll. I'm gonna go ahead and slice it up. We're gonna use this as the tool to scoop out our dip. Next step, go ahead and lay them out on a sheet tray. Now I have a little pastry brush with olive oil. Brush it. Perfect. Back to my chorizo. If you don't have chorizo at home, feel free to use, maybe ground turkey, or ground beef. It does the same thing, just make sure you season it really, really, well. One of the reasons I love using chorizo is because it already has smoked paprika, and garlic, and a whole bunch of other spices already included. So, it's pretty easy to just brown up, and throw it in your favorite dish. All right, perfect. My chorizo's done. I'm gonna go ahead and turn the fire off. Scoop it out. All right. Now that my chorizo's done, let me go ahead and pop my bread into the oven for about five to seven minutes until they're nice and golden brown. All right. My bread is out of the oven. It's nice and toasty. Now it's time to go in on the rest of our dip. Again, super simple, super easy. Here I have some cream cheese, and some guava jam. If you don't know what guava is, it's basically like a combination of strawberry and a pear. It's great for jellies, for paste, and then with a hand blender, we're gonna go ahead and whip this up until it's nice and airy. Perfect. Look at that color. It's so pretty. And that's it. Now let's build our dip. Here I have this lovely, lovely plate. And this is how it's gonna go. You ready? Simple, easy. Let's get to the point. We have some of our cream cheese and guava. Kind of spoon that out. All right. Now we are going to go by chorizo. This is why I like that it's crumbled and it's already cooled, so I can use my hands. And this is where it gets kind of fun. We're gonna go ahead and use plantain chips. Crush them up, and put them all over your dip. All right. And our next layer, more cream cheese, chorizo, chips. So you have salty, crunchy, sweet, and we're gonna go ahead with out bread. Get around the sides. All right, guys. There you have it. My super, easy and delicious guava and chorizo dip. All right, let me go ahead and dig in. Mm, it's creamy, it's salty, it's spicy. This is really a good bite. I really can't wait for you guys to try this at home.
