Miso Mac N Cheese

How to make miso Mac N Cheese.


  • 10 ounces (300 grams macaroni
  • 1/4 cup (50 grams butter
  • 3/4 cup (96 grams flour
  • 3 3/4 cup (90 cl) milk
  • 4 tablespoons yellow miso
  • 1 egg yolk
  • 1 1/4 cup (125 grams Comté cheese, grated
  • 4 tablespoons chives
  • Salt and pepper to taste
  • 4 tablespoons breadcrumbs


  1. Preheat oven to 350°F.
  2. Cook the pasta al dente according package instructions.
  3. Melt butter on low heat in a small pot. When it starts foaming a little, add the flour and cook for one minute until it starts bubbling, stirring constantly.
  4. Remove from heat and slowly add the milk while stirring. Keep stirring on low heat until the mixture starts to thicken.
  5. Remove from heat, add the miso and egg yolk and stir.
  6. Let the mixture sit for 5 minutes then add 1 cup grated cheese and chives and stir until all the cheese has melted.
  7. Add the cheese mixture to the pasta and stir well.
  8. Add salt and pepper.
  9. Butter the sides of a baking dish, add the pasta and spread the breadcrumbs and remaining cheese on top.
  10. Bake in the oven for 35 minutes until the top is golden brown.
