Beefy Pumpkin Cakes

These slightly sweet and savory balls of fall flavor are filled with beef jerky inside a fried pumpkin dough.


  • 2 tablespoons butter
  • 1/2 onion, chopped
  • 1 clove garlic, chopped
  • 1 pound beef jerky, shredded
  • Salt
  • Black pepper
  • 2 tablespoons parsley, chopped
  • 1 pound cooked pumpkin, cubed and mashed
  • 4 cups vegetable stock, boiling
  • 2 tablespoons butter
  • 5 1/2 cups wheat flour
  • 2 eggs, divided
  • 1 cup breadcrumbs or panko


  1. In a large saute pan over medium heat, melt butter and add onion and garlic. Cook until fragrant, then add the shredded jerky. Add more salt if needed, season with pepper and add parsley. Set aside.
  2. In a large pot, add the mashed pumpkin, vegetable stock and butter. Cook for approximately 10 minutes or until it starts to boil.
  3. Lower the heat, add all the flour at once and stir until a consistent dough forms.
  4. Remove from the heat, knead the dough and add the two yolks, one at a time, mixing well after each is added. Make small balls of dough and stuff with beef jerky mixture. Reform into balls, then dip into egg whites followed by breadcrumbs.
  5. Fry in hot oil, then drain on paper towels. Allow to cool slightly before serving.
