Aebleskiver Mozzarella Bite

  • 1 cup all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • 1 1/2 cups buttermilk
  • 1 egg, separated
  • 2 tablespoons unsalted butter, melted
  • Butter for greasing the pan
  • 6 ounces mozzarella, cut into 1/4-inch cubes
  • 2 tablespoon chopped parsley
  • 1 tablespoon grated Parmesan
  • 1 cup marinara sauce


  1. Preheat oven to 170 degrees.
  2. In a medium bowl, whisk dry ingredients together. Set aside.
  3. In a medium bowl, add egg white and whip until stiff peaks form. Set aside.
  4. In another bowl, whisk together buttermilk, egg yolk and melted butter until well combined. Make a well in the center of the dry ingredients. Pour wet ingredients in and fold until completely combined. Gently fold egg white into the batter.
  5. Place the aebleskiver pan on medium-low heat. Brush each round with melted butter. When it sizzles add 1 full tablespoon of batter to each round. Add a cube of cheese in the center. Using a skewer, gently push the cube of cheese down into the center, trying to cover it with batter. When air bubbles show up in the batter, use 2 skewers to turn bites halfway. Then flip over. Cook for 60 to 90 seconds more. Remove to a sheet tray. Keep warm in oven.
  6. Sprinkle with parsley and Parmesan, and serve with marinara sauce on side.
