Aebleskiver Pancake Bacon Syrup

  • 1 cup all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 egg, separated
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Melted butter for greasing the pan
  • Filling:
  • 6 cooked bacon slices, chopped
  • 1/4 cup maple syrup, plus more for drizzling


  1. Preheat oven to 170 degrees.
  2. In a medium bowl, whisk dry ingredients. Set aside.
  3. In a separate medium bowl, add egg white and whip until stiff peaks form. Set aside.
  4. In another bowl, whisk together buttermilk, egg yolk and melted butter until well combined. Make a well in the center of the dry ingredients. Pour wet ingredients in and fold until completely combined. Gently fold egg white into the batter.
  5. In a small bowl, stir together bacon and syrup. Set aside.
  6. Place the aebleskiver pan on medium-low heat. Brush each round with melted butter. When it sizzles add 1 tablespoon of batter to each round.
  7. Drop a 1/2 teaspoon of bacon mixture into each. Using a skewer, gently push the mixture down into the center. When air bubbles show up in the batter, use 2 skewers to turn cake bites halfway. Then flip over. Cook for 60 to 90 seconds more. Remove to a sheet tray.
  8. Keep warm in oven. Serve with more maple syrup.
