Aebleskiver Red Velvet Bites

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 4 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup buttermilk
  • 1 egg
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon red food coloring
  • Powdered sugar for sprinkling
  • Cream cheese filling:
  • 8 ounces cream cheese, room temperature
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract


  1. In a large bowl, add cream cheese, sugar and vanilla extract. Whisk until smooth. Place in refrigerator until ready to use. Can be made a day or 2 ahead.
  2. In a medium bowl, whisk dry ingredients. Set aside.
  3. In another bowl, whisk together buttermilk, egg, melted butter and food coloring until well combined. Make a well in the center of the dry ingredients. Pour wet ingredients into the well and fold until just combined.
  4. Place the aebleskiver pan on medium-low heat. Brush each round with melted butter. When it sizzles add 1 tablespoon of batter to each round.
  5. Drop 1/2 teaspoon of cream cheese mixture into each. Using a skewer, gently push the mixture down into the center. Add 1/2 teaspoon of more batter on top if necessary to cover. When air bubbles show up in the batter, use 2 skewers to turn cake bites half way. Then flip over. Cook for 60 to 90 seconds more. Remove to a sheet tray.
  6. Sprinkle with powdered sugar.
