Ingredients

  • Air Fryer Chicken Caprese
  • 2 boneless Chicken breasts
  • 1 Cup mozzarella cheese
  • 1 Cup chopped tomatoes
  • 1 Cup fresh basil leaves
  • 1/2 Cup Grated Parmesan
  • 1/2 Cup Marinara sauce
  • 3 Large eggs
  • 1/2 Cup All-purpose flour
  • 1 Cup Breadcrumbs or Panko
  • Olive oil
  • Salt & pepper

Steps

  1. Make a pocket with a long sharp knife on each chicken breast
  2. Beat the slices inside a sealable plastic bag
  3. Fill the pockets with mozzarella cheese, chopped tomatoes, and basil leaves.
  4. Bread each breast making sure to keep the filling inside (Flour, eggs, breadcrumbs, eggs, breadcrumbs)
  5. Air Fry for 5-10 minutes at 400°F, turn the chicken breast, top with marinara sauce and parmesan cheese, and cook for 5 more minutes
  6. Serve with more fresh basil and pesto
