Animal Cracker Cheesecake

Ingredients

  • Crust
  • 200g graham crackers
  • 100g animal crackers
  • 200ml unsalted butter, melted
  • Cheesecake
  • 1 tbsp powdered gelatin + 3 tbsp cold water
  • X2 250g blocks of cream cheese
  • 350ml – 1 ½ cups whipping cream
  • 1 tsp vanilla extract
  • 1 tsp raspberry flavouring
  • 300g White chocolate, melted
  • 3 drops pink food gel
  • Whipped cream
  • 200ml whipping/thickened cream
  • 1 tsp vanilla extract
  • Decorations
  • 1 cup animal crackers
  • Sprinkles

Steps

  • Crust
  • Add the graham crackers into the bowl of a food processor, blitz until you reach fine crumbs. Add the animal crackers and utter and blitz to break up the animal crackers into pea sized crumbs.
  • Cheesecake
  • Add the gelatin and water into a small mixing bowl. Use a form to mix until well combined. Allow to set for 5 minutes. Microwave for 30 seconds to melt right before adding to the cheesecake mixture.
  • Add the cream cheese, cream, vanilla and raspberry flavouring to the bowl of a food processor and mix until smooth. Scrape down the bowl and add the melted gelatin. Mix, then scrape down and add the white chocolate. Mix until everything is really well combined.
  • Add half of the mixture into a bowl and then add pink food gel to the remaining mixture. Mix until evenly coloured.
  • Use an ice cream scoop to add each mixture into your chilled crust, alternating between each colour until you’ve used all the mixture. Gently tap the tin on your work bench to let any air bubbles rise to the top before chilling in the fridge for 2 hours or overnight.
  • Whipped cream
  • Add the cream and vanilla extract to a large mixing bowl. Use an electric hand mixer to whip to stiff peaks. Add to a piping bag fitted with an open star tip.
  • Pipe little swirls of cream on cheesecake. Then finish by adding animal crackers on top and a sprinkle of coloured sprinkles.

  • Cheesecake can be stored in an airtight container for up to three days.
