Animal Doughnuts

Cute doesn't begin to describe these sweet, colorful treats.

  • Doughnut Batter:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup sugar
  • 2 tablespoons honey
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/3 cup + 1 tablespoon buttermilk
  • Topping:
  • Small nuts or dried fruit
  • 6 tablespoons whipping cream
  • 1 cup confectioner's sugar
  • Food coloring
  • Dessicated coconut

  1. Bake the doughnuts: Whisk together the flour, baking powder and salt in a small bowl and set aside. In a large bowl, combine the butter, sugar, honey, egg and vanilla extract. Add the buttermilk and mix until combined. Add the dry ingredients and mix until just combined - make sure not to overmix. Spoon the batter into piping bag fitted with a large round tip. Pipe the batter into a greased doughnut pan and bake at 400F for 7 minutes. Cool for 1 minute in the pan, then flip the pan over to remove the doughnuts and cool completely on a wire rack.
  2. Decorate the doughnuts: Combine the whipping cream and confectioner's sugar in a bowl and whisk until fully incorporated. Divide the glaze into as many bowls as you like and dye it your desired colors.
  3. Sheep: Dunk the doughnuts into white glaze, then into a bowl of dessicated coconut. Use some more white glaze to create a fur-less face. Draw eyes and a nose with black-colored glaze and horns with brown-colored glaze.
  4. Pig: Stick 2 almonds into the top of each doughnut for ears. Spoon some light pink-colored glaze on top of the doughnuts, then draw a nose with some white glaze. Draw the eyes and nostrils with brown glaze and cheeks with bright pink glaze.
  5. Cow: Stick 2 cashew halves into the top of each doughnut for the horns, then an almond on either side for the ears. Spoon some white glaze on top, then spoon some brown glaze on top of the ears to create spots. Use pink glaze to create the nose and brown glaze for the eyes and nostrils. Use yellow glaze to create the ring between the nostrils.
