Apple Curry Croquettes

Sweet apples deliciously balance the spiciness of this deep-fried finger food.


  • 1/2 apple
  • 200 grams potatoes
  • 100 grams ground pork
  • 1/4 onion, minced
  • 2 teaspoons curry powder
  • Salt
  • Black pepper
  • 5 grams butter
  • Tempura batter mixed with a little water
  • Panko breadcrumbs
  • Vegetable oil


  1. Peel and cut potatoes into cubes and microwave for 4-6 minutes.
  2. Cut apple into cubes.
  3. Melt butter over medium heat in a frying pan. Add in apple cubes, onion and ground pork and saute until pork is no longer pink.
  4. Add in curry powder, salt and pepper and season to taste.
  5. Add in potato cubes and mash together until fairly smooth. Flatten inside the frying pan and divide into eight portions. Roll each portion into a ball.
  6. Dip the balls into tempura batter. Then roll them in the panko breadcrumbs to coat.
  7. Cook in hot oil until golden brown.
  8. Decorate with apple stems if desired.
