Apres Ski Fondue for One

There is no shame in enjoying an entire cheese fondue yourself. In fact, here's how you do it right.

  • 1/2 cup Swiss cheese
  • 1/2 cup Gruyere cheese
  • 2 teaspoons cornstarch
  • 1 clove garlic, peeled
  • 1/4 cup white wine
  • 1 teaspoon lemon juice
  • 1 pinch dry mustard
  • 1 pinch salt
  • Bread, cubed
  • Cauliflower, chopped
  • Steamed asparagus
  • Granny Smith apple, sliced

  1. Cut garlic in half and rub the inside of a small oven-proof container. Place in oven at 250 degrees to keep warm.
  2. Combine Swiss and Gruyere in a medium bowl, add cornstarch and mix.
  3. Over a medium heat, add wine and lemon juice to a small saucepan. Once simmering, turn heat to low and add the cheese mixture. Add dry mustard and salt once cheese is melted and smooth.
  4. Pour cheese mixture into container. Keep in oven until just before serving.
  5. Enjoy with bread, cauliflower, asparagus, and apples.
