• 1 9-inch frozen pie crust, thawed
  • 6 eggs
  • 1 cup Simply™ Almond Unsweetened Original
  • 1 cup fresh spinach, chopped
  • 1 can artichoke hearts
  • 1 cup cherry tomatoes, halved
  • 2 garlic cloves, minced
  • 2 tablespoons minced fresh chives, plus more for garnish
  • 2 tablespoons minced fresh parsley
  • Salt and pepper


  1. Preheat the oven to 400 degrees F.
  2. Drain the artichoke hearts. Pat them dry and slice into quarters.
  3. In a large bowl, whisk together the eggs, Simply™ Almond Unsweetened Original, artichoke hearts, tomato, spinach, garlic, chives, parsley, salt and pepper.
  4. Place pie crust on a baking sheet and pour the filling into the crust. Bake for 15 minutes at 400 degrees F.
  5. Reduce the heat to 350 degrees F, and bake an additional 35 minutes, until golden brown and set.
