Avocado Chicken Burritos

Avocado Chicken Burritos

Ingredients

  • For filling:

  • 2 chicken breasts or 4 chicken thighs, cubed

  • Olive oil

  • 1 large shallot, diced

  • 3 garlic cloves, minced

  • 1 teaspoon salt

  • Freshly ground black pepper

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon ground cumin

  • 1/4 cup crushed pineapple

  • 1 cup shredded mozzarella cheese

  • 1 large avocado, cubed

  • 4 large flour tortillas

  • For cilantro dipping sauce:

  • 1 cup sour cream or Greek yogurt

  • 1/2 large avocado

  • 2 garlic cloves

  • 1/2 teaspoon salt

  • 2 tablespoons olive oil

  • 1/2 tablespoon vinegar

  • Large bunch fresh cilantro

  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the cilantro dipping sauce first. Place the sour cream, avocado, garlic, olive oil, vinegar, salt and cilantro in a food processor and puree until smooth. Transfer the sauce into a small bowl and set aside.

  2. Prepare the chicken filling. Cube your desired cut of meat. Preheat a large frying pan over medium heat and drizzle olive oil into the pan. Add the cubed chicken into hot pan and sauté for 5 to 7 minutes, until nicely browned all over. Add the remaining ingredients: shallots, garlic and crushed pineapple. Along with the seasonings: salt, black pepper, paprika, cumin and chili powder. Stir everything together and cook for another 4 to 5 minutes.

  3. Assemble the burritos. Spread a bit of the cilantro sauce in the center of the tortilla first. Sprinkle some mozzarella cheese, add the chicken filling, chopped avocado and more mozzarella cheese on top. Fold over the sides, then roll the tortilla into a wrap, seam side down.

  4. Preheat a grill pan or a frying pan over medium heat. Place the burritos seam side down. Heat for 3 to 4 minutes per side. Serve hot with cilantro sauce.

- These scrumptious, cheesy, avocado and chicken burritos have a sweet and tangy secret ingredient on the inside. Let's make them. For my dipping sauce, I'll need two cloves of garlic, and just half of an avocado. And I'm setting aside the other half for later. I'll place the avocado into my good processor, add the garlic, and for some creaminess, I'm adding some sour cream. Next, I'm adding a large bunch of fresh cilantro. A little bit of salt for flavor. Just a touch of ground black pepper. And then drizzle in some olive oil, and just a touch of vinegar. And then give this a whirl until I have a smooth dip. And now on to the chicken filling. Dice one large shallot. And a few garlic cloves. The garlic cloves I'm just going to crush and then finely chop. Today I'm using two large chicken breasts. You can also use chicken thigh for this recipe. And cubing this chicken really cuts down on the cooking time. It's going to cook in the pan really fast. I'm heating a large frying pan over medium heat, and adding a little drizzle of olive oil. Once the pan is nice and hot, I'll add my chicken. And then season the chicken with a little bit of salt and freshly ground black pepper. And then fry the chicken for about five to seven minutes, until it's golden brown all over. Next into the pan, I'm adding my shallots and garlic that I prepared earlier. And now for my secret ingredient: crushed pineapple. Combine everything together. And now for some spices. I'm going to sprinkle in a little bit of smoked paprika, chili powder, and ground cumin. And I'm going to let this cook for about five minutes, until the shallots are nice and tender. And now it's time to assemble these burritos. And I'm actually going to add some avocado cilantro dipping sauce on the inside. Sprinkle on some freshly grated mozzarella cheese, and spoon on a generous amount of the chicken filling. Then top that off with some chopped avocado. And more mozzarella cheese on top. I'm going to fold two sides over, and then roll the burrito. And it's ready for the grill. I'll place them same side down first, and let these heat for about three to four minutes on each side. And these burritos are ready to be enjoyed. And for an extra kick, have some avocado cilantro dipping sauce on the side. Let's break in to this beauty and see what it looks like on the inside. Look at that. Doesn't that look delicious? That chicken smells so good, and that sweet and tangy flavor from my secret ingredient, crushed pineapple. Give these a try.
