Avocado Fries


  • 1 avocado, sliced

  • Oil for frying

  • For the batter station:

  • 1-2 cups milk

  • 1 egg, beaten with a drop of water

  • 1/2 - 1 cup flour

  • Salt, to taste

  • For the spicy mayo dip:

  • 1/2 cup mayonnaise

  • 1 tablespoon lime

  • Sriracha, to taste


  1. Dunk a slice of avocado in the milk, flour, eggs, and then back into the flour. Put the slices on a cookie sheet and then fry them!

  2. Make your spicy mayo dip by combining 1/2 cup of mayonnaise, lime juice, and however much Sriracha you like (depending on how spicy you like things!).

- I love avocados so much that I can't juggle them very well. But I love them! You know one of my favorite ways to eat avocados is fried. So, let's fry 'em up. First thing you gotta do is cut them into slices. You know the trick with the knife and the avocado, right? Just boop, twist, it's out. We know that, right? Okay. So, get rid of the seeds, it's on the ground. Okay, we're just gonna cut them into slices to be prepped for frying. All right. So, this was actually the first experience I ever had frying anything, and let me just say that it was the introduction to a lifetime of frying goodness. Okay, so, we've got our sliced avocado, ready to go to the batter station. But our batter station isn't ready quite yet. So, we've got flour, eggs, and milk. This comprises our batter station. So, we're gonna crack the eggs into this bowl, and I like to add just a wee bit of water to it as well, and then we're gonna whisk that up. Okay, so we have our batter station ready, we have our avocado slices, so let's start dipping. So, we're gonna start with the milk, then to the flour, and then to our eggs, and back to the flour. Successfully has gone through the batter station. We'll put it right there. It's ready to be fried. And you know, you could do this with a slotted spoon or something less messy, but why would you want to be less messy? It's like way more fun to get your hands dirty, right? So, something that I learned when I was at culinary school, one of the chef professors, happened to mention during a demo, an avocado trick, and he mentioned this like it was no big thing, he mentioned it so casually, and my ears perked up. I was like, "he's talking about avocados!" He said, that if you have an avocado, and it's not as ripe as you want it to be, you cut out where the nub is on top, and put salt in it, put the nub back in, set it aside for a day, and it helps expedite the ripening process. So, we've got our oil here, we've got our avocado ready to go into the oil, first we need to make sure that it is nice and hot, frying levels of hotness here. So, we're gonna test it, putting a little flour on, and if you get a nice reaction, if the flour starts to like bubble up a bit, you know it's hot enough, it's ready to go. So I'm just gonna use my hands to put these avocado slices in. Be very careful, obviously, this is super hot oil. So, place them in. Oh yeah. Oh yeah. The oil's working it's magic already. Now you don't want to over fill it, because you don't want these to get too crowded in here. So maybe do, you know, a few at a time. Do you hear that sound? Do you hear the bubbling and the frying thing doing its magic? This is going to be amazing. This is the sound that you want to hear that equals deliciousness, essentially. Alright, these are looking really good. This will only take a couple of minutes, you guys. Keep your eye on them. You want them to get a nice brown color. Alright, this one is looking good. Oh, it's brown, it's gonna be so crispy. This looks awesome. Now, important tip about frying things, and cooking in general, let's add some salt to these guys as soon as they're out of the fryer. And then put them to the side to cool for just a second, cuz they're super, super hot right now, you don't want to burn any tongues. So, while that's chillin' out, doing its thing, We're gonna make the dip. It's a Sriracha mayo dip, and it's super bomb. Okay, so we've got mayo, we're gonna add some Sriracha, and really, however much you like spicy, that's how much you should add. So, I'm gonna start with a bit, I'll taste as I go, to make sure that it's a good amount, I wanna add some lime juice, give it that acidity, that citrus punch, it's really gonna take this dip over the edge. Alright, let's do a little mixy mixy. This is looking so good. Creamy mayo Sriracha delight. So I'm liking the look of this because there's gonna be a strong kick to this. Here, let me test it. Whew! Yes. Yes, this is perfect, I love it, this is gonna go so good with the avocado fries. How easy was that dip, you guys? Just stir three things in together, donezo. And now you eat. Can I, do I get to eat right now? Can I do that? Is that a thing? Okay, I'mma do that. Mmm. Snap. This is such a winner, every time, does not go wrong. Who would have thought of avocados fried?
