Avocado Lobster Roll

Add even more creamy goodness to your lobster roll with mashed avocado.


  • 2 avocados
  • 1 1/2 pounds lobster tail, cooked
  • 1 tablespoon Old Bay seasoning
  • 1/4 cup celery, chopped
  • 2 tablespoons parsley, chopped
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 4 New England-style hot dog buns
  • Softened butter for browning


  1. Slice and pit avocados, and scoop into a bowl. Mash with a potato masher until creamy. Add remaining ingredients, stirring to combine.
  2. Heat a nonstick pan or griddle over medium-high heat. Slather buns with butter and brown in pan.
  3. Top buns with avocado lobster mix and enjoy!
