Avocado Pancakes

Ingredients

  • 1 cup oat flour
  • 1 1/2 tbsp fine sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 1 ripe avocado, mashed
  • 3/4 cup buttermilk
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 cup blueberries
  • Coconut oil, to fry
  • Maple syrup, to serve

Steps

  1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  2. In the bowl of a food processor, add the mashed avocado, buttermilk, egg and vanilla and process until smooth. Add the avocado mixture to the flour mixture and stir until just combined.
  3. Place a bit of coconut oil in a large skillet or griddle over medium heat.
  4. Once melted and hot, scoop batter into the pan, dot each pancake with a small handful of blueberries and cook for 2 to 3 minutes per side until golden brown.
  5. Serve with maple syrup.
