Stop tossing the greasy gold that is bacon fat and put it to use in something like a maple-glazed cookie topped with bacon.
Ingredients
Bacon Fat Cookies
- 1/4 cup rendered and chilled bacon grease
- 1 cup sugar
- 1/4 cup butter, softened
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla extract
- 3 strips of bacon, fully cooked and crumbled
Maple Bourbon Glaze
- 2 tablespoons maple syrup
- 1 tablespoon bourbon
- 1/2 cup powdered sugar
Steps
Bacon Fat Cookies
- Preheat oven to 375 degrees.
- In a large bowl, cream together the bacon grease, sugar and butter with an electric mixer.
- Carefully add dry ingredients, then add in the egg and vanilla. Mix to combine.
- Scoop tablespoon-sized dollops of the dough and place on a parchment-lined sheet tray. Press down slightly with your thumb.
- Bake for 10 to 12 minutes and set aside to cool.
Maple Bourbon Glaze
- In a small bowl, whisk together the maple syrup, bourbon and powdered sugar.
- Drizzle over cookies and top with crumbled bacon.
