Bacon-Wrapped Hot Dogs
You've never had a dog like this, complete with homemade bun, bacon-wrapped sausage and a lime basil sauce.
Ingredients
- 4 teaspoons dry yeast
- 3 tablespoons sugar
- 3/4 cup + 1 1/2 tablespoon warm water
- 3 1/2 tablespoon olive oil
- 3 cups + 3 tablespoons white flour
- 2 egg yolks for brushing
- 3/4 cup + 1 1/2 tablespoon cold milk
- Vegetable oil as needed
- 1 tablespoon lime juice
- Salt
- Black pepper
- 1 large garlic clove
- 1/2 bunch of basil leaves
- 3 1/2 tablespoon butter
- 4 onions, sliced
- 8 hot dog franks
- 16 bacon slices
Steps
- Preheat oven to 390°F.
- Mix the yeast, sugar and warm water, and let rest for 15 minutes.
- Add the olive oil and flour gradually, mixing with a spoon. Season with salt to taste.
- Knead until the dough becomes elastic. Let rise for 45 minutes.
- Shape into buns, and brush with egg yolk. Bake for 25 minutes.
- In a blender, mix milk and oil at low speed. Add the lime juice.
- When the mixture becomes thick with a creamy consistency, add the salt, pepper, garlic clove and basil leaves. Blend for 1 more minute. Set aside.
- Add butter to a frying pan, and as soon as it melts, add the onion slices and sauté until caramelized.
- Roll the franks up in the bacon slices, and place in 350°F oven for 20 minutes.
- Cut the buns in half lengthwise, arrange the franks, cover with the basil sauce, and top with the caramelized onions.
