- 3 strips of bacon
- 3 large scallops
- 1 tablespoon butter
- Parsley, to garnish
- Heat a saute pan on medium heat. Add bacon and cook until done but not crispy, about 4 to 5 minutes.
- Remove from pan onto a paper towel-lined plate.
- Roll each scallop in a strip of bacon and use a toothpick to hold the bacon in place.
- Add butter to the same saute pan and cook scallops until browned, about 2 minutes on each side. Tilt pan and baste with butter.
- Remove from heat and garnish with parsley.
