Baja Fish Tacos

Ingredients

Baja Fried Fish

  • 2 pounds firm white fish filets, cod (sliced into 3-4 inch strips)
  • 1 teaspoons garlic powder
  • 1 teaspoons cayenne pepper
  • 1 cup beer (or sparkling water)
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 cup red cabbage (thinly sliced)
  • 4 limes
  • 12 corn tortillas
  • Vegetable oil to fill a deep pan or pot up to 2 inches
  • Dean's French Onion Dip, for serving

Marinade

  • 1 cup Dean's French Onion Dip
  • 1 teaspoon cumin powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne powder
  • Salt and pepper, to taste

Pico de Gallo

  • Diced tomatoes
  • Red onion
  • Garlic
  • Serrano chiles
  • Lime juice
  • Cilantro
  • Salt and pepper

Steps

Baja Fried Fish

  1. Combine sliced cabbage, some salt, and the juice of one lime. Massage and let sit for at least 10 minutes. Reserve for topping.
  2. Heat oil to 370-375. In one bowl, combine 1 teaspoon garlic and one teaspoon cayenne pepper and 1/2 cup flour. In another bowl, make the batter: whisk together 1 cup flour, beer, and baking powder.
  3. Dredge fish strips in seasoned flour, dip into batter, shake off excess and fry for about 2-3 minutes. Don't overcrowd pot.
  4. Drain on paper towel, and begin heating tortillas.
  5. Add fish to tortilla, top with cabbage and pico de gallo and serve!

Marinade

  1. In a bowl, combine dip, cumin powder, 1 teaspoon garlic powder, 1 teaspoon cayenne powder, and salt and pepper to taste. Throughly coat fish strips and let marinate for 30 minutes to 1 hour.

  1. Combine diced tomatoes, red onion, garlic, Serrano chiles, lime juice, cilantro, salt and pepper.
