3-Cheese Zucchini Biscuits

Low-carb and gluten-free, these zucchini biscuits are nutritious and cheesilicious.

Ingredients

  • 2 medium (to yield 2 cups) zucchini
  • 1 egg
  • 1/4 cup sharp cheddar cheese, shredded
  • 1/4 cup parmesan, shredded
  • 1/4 cup mozzarella cheese, finely diced
  • 1/2 cup almond meal
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon ground black pepper

Steps

  1. Preheat the oven to 425 degrees F.
  2. Line a rimmed baking sheet with parchment paper and set aside.
  3. Shred the zucchini using a kitchen grater.
  4. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out all the excess liquid. Discard the juices.
  5. Place the zucchini and remaining ingredients into a medium bowl and then mix until combined.
  6. Drop heaping spoonfuls of the mixture on the prepared baking sheet and lightly press the mounds with your hands to slightly flatten.
  7. Bake for 20-25 minutes, or until the edges are golden.
