Baked Apple Crumbles

It's not against the rules to keep one – or two — of these sugary, crunchy baked apple crumbles for yourself.


  • 4 red apples
  • 1/2 cup rolled oats
  • 1/4 cup plus 2 tablespoons oat flour
  • 1/4 cup plus 2 tablespoons coconut sugar
  • 1/4 cup pecans, chopped
  • 3 tablespoons coconut oil, melted
  • 1/3 cup water
  • Vanilla bean ice cream


  1. Preheat oven to 350 degrees.
  2. Cut and core the apples, making sure not to scoop through the bottom. Place in a baking dish.
  3. In a medium mixing bowl, mix together the oats, flour, coconut sugar, pecans and coconut oil. Scoop mixture into apples.
  4. Pour water in the bottom of the baking dish, and bake apples for 30 to 40 minutes until apples are tender but not mushy.
  5. Top each apple with vanilla bean ice cream.
