Cheesy potato and bacon goodness rolled up into a ball of fried, bite-sized comfort.
6 large potatoes, cooked and cubed
1 onion, minced
7 ounces bacon, sliced into 1/4-inch strips
1 Saint-Nectaire cheese, cubed
3 eggs, beaten
Oil for frying
Mash the potatoes.
Brown the onions and the bacon. Mix with the mashed potatoes.
Make balls out of the mashed potatoes and stuff each with a cube of Saint-Nectaire.
Dip balls in flour, then in eggs, then in the breadcrumbs.
Fry balls in oil until crispy.
