Ingredients

Upside Down Pineapple Banana Bread

  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup light brown sugar
  • 3/4 cup granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed bananas
  • 2/3 cup canned chopped pineapple, drained
  • 2 cups all-purpose flour
  • 1/2 cup ground walnuts
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon fresh ground nutmeg
  • 1 teaspoon ground cinnamon

Caramelized Banana Slices

  • 3 bananas (slightly firm), peeled and sliced in half lengthwise
  • 1/2 cup light brown sugar, packed
  • 1/4 cup half and half
  • 2 tablespoons butter

Steps

Upside Down Pineapple Banana Bread

  1. Prepare the batter.
  2. Using a hand mixer, beat butter with sugars until whipped.
  3. Add in eggs one at a time and mix until incorporated.
  4. Whisk in vanilla extract, bananas and pineapple.
  5. In another bowl, mix together dry ingredients and add to batter.
  6. Lay caramelized banana slices on the bottom of the loaf pan, pour in batter and bake for 60-75 minutes until a skewer comes out clean.

Caramelized Banana Slices

  1. Preheat oven to 350°F, and prepare a loaf pan with cooking spray.
  2. Prepare caramelized banana slices.
  3. Preheat a large nonstick pan over medium heat.
  4. Mix together brown sugar, half and half, and butter.
  5. Cook, swirling the pan, for about 3 minutes.
  6. Add banana slices and cook another minute or two, until bananas begin to soften slightly and caramelize.
  7. Transfer bananas, cut side down, to the loaf pan.
  8. Pour remaining caramel over the top.

  6. Spread 1/3 of the batter into prepared loaf pan, top with 1/3 cup Nutella and repeat 2 more times.
  7. Using a skewer or knife, swirl the Nutella into the batter.
  8. Sprinkle with raw sugar and bake for 45-60 minutes until a skewer comes out clean.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Banana Cream Filling

  • 8 ounces cream cheese, room temperature
  • 1/2 cup banana pudding
  • 1 banana, sliced into 1/4-inch-thick slices
  • Crushed Nilla Wafers for garnish

  5. In another bowl, mix together dry ingredients; add to batter.

Banana Cream Filling

  1. Beat cream cheese until smooth.
  2. Fold in banana pudding and banana slices. Keep cool.
  3. Spread 1/2 of the batter into prepared loaf pan.
  4. Top with banana cream filling, sprinkle with Nilla Wafers, top with remaining batter and another layer of cream filling.
  5. Run a skewer through the middle to create a marbling effect.
  6. Garnish with more crushed Nilla Wafers.
  7. Bake for 60-75 minutes until a skewer comes out clean.
