Banana Bread: 3 Ways

Don't settle for basic banana bread — here are 3 ways to jazz it up.


  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup light brown sugar
  • 3/4 cup granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed bananas
  • 2/3 cup canned chopped pineapple, drained
  • 2 cups all-purpose flour
  • 1/2 cup ground walnuts
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon fresh ground nutmeg
  • 1 teaspoon ground cinnamon
  • Caramelized banana slices:
  • 3 bananas (slightly firm), peeled and sliced in half lengthwise
  • 1/2 cup light brown sugar, packed
  • 1/4 cup half and half
  • 2 tablespoons butter


  1. Preheat oven to 350°F, and prepare a loaf pan with cooking spray.
  2. Prepare caramelized banana slices. Preheat a large nonstick pan over medium heat. Mix together brown sugar, half and half, and butter. Cook, swirling the pan, for about 3 minutes.
  3. Add banana slices and cook another minute or two, until bananas begin to soften slightly and caramelize. Transfer bananas, cut side down, to the loaf pan. Pour remaining caramel over the top.
  4. Prepare the batter. Using a hand mixer, beat butter with sugars until whipped. Add in eggs one at a time and mix until incorporated. Whisk in vanilla extract, bananas and pineapple.
  5. In another bowl, mix together dry ingredients and add to batter.
  6. Lay caramelized banana slices on the bottom of the loaf pan, pour in batter and bake for 60-75 minutes until a skewer comes out clean.
