• 3 eggs
  • 1 teaspoon butter
  • Salt
  • 2 tablespoons heavy cream, fresh
  • Black pepper


  1. Pour the eggs in a small saucepan.
  2. Add 1 tablespoon butter and cook on low heat.
  3. Mix it continuously with a spatula, always bringing the clotted eggs to the center of the pan.
  4. Remove from heat, then add the salt and the heavy cream to keep it from cooking.
  5. Season with black pepper and serve.
