1 package strawberries, halved
1 dragon fruit
Cranberry jello liquid:
1 cup cranberry juice
1 1/2 tablespoons granulated sugar
1 teaspoon agar agar powder
Carbonated jello liquid:
1 cup water
1/4 cup granulated sugar
2 teaspoons agar agar powder
1 cup carbonated water
Use a melon baller to scoop out the dragon fruit and place a few pieces in a Bundt pan. Add some of the mixed berries and strawberries.
For the cranberry jello: In a small bowl, combine agar agar powder and sugar.
Boil cranberry juice in a small saucepan, and add agar agar and granulated sugar mixture. Whisk to combine, then remove once sugar has melted.
For the carbonated jello: In a small pot, bring water to a boil. Add agar agar powder and sugar and whisk until melted. Remove from heat, then add carbonated water and stir to combine. Pour this mixture over the fruit until it is covered. Place pan in refrigerator until solid.
Add more fruit to the pan and pour more of the carbonated jelly over the top. Place in refrigerator until solid.
Add remaining fruit, then pour the cranberry jello over the top. Return to refrigerator until solid. Garnish with fruit, mint leaves and edible flowers to serve.
