With hash browns, chorizo and avocado rolled in, how can it not be?
2 strips crispy bacon
1/2 cup shredded cheese
4 ounces spicy chorizo, uncased and cooked
1 piece ham, thinly sliced
1, 12-inch tortilla
1 egg, cooked over easy with a broken yolk
1 store-bought frozen hash brown patty
4 ounces vegetable oil
3 halved tomatoes, charred
5 garlic cloves
1 tablespoon chipotle pepper puree
1/2 cup chopped cilantro, with stems
1 Spanish onion, charred
Blend salsa ingredients together and create a homogenous puree; set aside.
Heat skillet to high and gently toast tortilla.
Cook egg, and, after breaking yolk, add cheese to the top of the egg. (The cheese will melt from the bottom up, using the heat from the pan, no need to cover.)
Place the ingredients in the pan and keep warm while assembling.
Assemble burrito: tortilla, avocado, hash browns, bacon, ham, chorizo, cheesy egg, and 2 tablespoons of salsa.
Roll and enjoy.
