These pineapple popsicles dipped in a coconut shell are hiding a secret ingredient.

Black and White Piña Colada Popsicles

Ingredients

  • Black piña popsicles:

  • 3 cups pineapple juice

  • 4 tablespoons activated charcoal powder

  • White colada shell:

  • 1 cup coconut milk

  • 2 1/2 tablespoons melted white chocolate

  • 2 tablespoons coconut butter

Instructions

  1. Black piña popsicles:

  2. In a medium bowl, mix juice and charcoal together. Pour into popsicle molds, line top with foil, and insert popsicle sticks. Freeze overnight.

  3. White colada shell:

  4. In a saucepan over very low heat, melt all ingredients together. Transfer to a bowl, and let cool, but not enough to solidify.

  5. Assemble:

  6. Dip popsicles into the white colada shell, then place on a parchment-lined baking sheet. Place in freezer to harden, then enjoy.

- This pina colada popsicle has a secret ingredient. Can you guess what it is? Let's get started. Alright, let's make black popsicles. We're going to add our pineapple juice to a blender. Our activated charcoal powder. And blend. And it's already done. Let's pour it into our popsicle molds, and then we're gonna freeze them. And you can do this with any juice you like. I really like the combination of the white coconut with the black pineapple, but use your favorite juice. Alright, so we'll just finish off the last one. We're now going to cover it with our little popsicle lid, and that's going to give us a guide of where our sticks go. And if you're worried about them goin' off to the side, you can add a layer of foil in between the lid and those will help them stand straight up. Alright, our popsicles are ready to go into the freezer. Okay, our popsicles are freezing, which means it's time to get our shell ready. So for our coconut shell, we've got coconut oil. We've got coconut butter. And last but not least, we have coconut cream, and all we're doin' is just melting it to bring it together. So just a little low heat. And you can really see how it's coming together into this white shell. And then we're gonna put our shell in a bowl so that we can dip our popsicles straight into that. Alright, our popsicles are ready to come out of the freezer, so we're gonna go grab them and start dippin'. Alright, we've got frozen popsicles. We've got our shell ready to go, so let's get dippin'. Just pop this lid off carefully. Carefully pull them out of the mold, dip it into our beautiful coconut sauce, and we'll lay it on our tray, and then these popsicles are gonna go back into the freezer just real quick just to set the shell really quickly, and then we can dig in. Our popsicles are set and ready to eat. Our beautiful black and white pina colada popsicles. The black charcoal pina and the white coconut colada. Awesome, delicious, fresh for the summer. You're definitely gonna want to try these.
