Blue Sky Jelly

Kick back, relax and take a break with dessert cups made with gold leaf-infused blue jello and sweet Greek yogurt.


  • 1 tablespoon gelatin plus 1/4 cup water
  • 1/2 cup Blue Hawaii Cocktail
  • 1 3/4 cups water
  • Squeeze of lemon juice
  • Gold leaf
  • 1/2 cup sweetened Greek yogurt


  1. Sprinkle the gelatin in the water, then heat it in a 500-watt microwave for about 15 seconds before blending to dissolve.
  2. In a medium bowl, add the Blue Hawaii, 1 3/4 cups water, lemon and dissolved gelatin. Mix well.
  3. Pour the mixture into a baking dish, add gold leaf and stir to combine. Chill in the refrigerator for approximately one hour until set. Remove from refrigerator and use a fork to break into pieces.
  4. Alternate layers of gelatin and Greek yogurt in glasses, and enjoy.
