Blueberry Waffles

Blueberry cinnamon waffles made with Simply™ Almond Original topped with maple syrup and fresh blueberries.

Ingredients

  • 3 1/4 cups AP flour
  • 3 tablespoons brown sugar
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 3/4 cups Simply™ Almond Original
  • 2 eggs (for dairy-free version, sub 1/2 cup apple sauce)
  • 5 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 2 cups blueberries, divided
  • 1/2 cup maple syrup

Steps

  1. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon and salt.
  2. In a medium bowl, whisk the Simply™ Almond Original, eggs (or apple sauce, if using), oil and vanilla.
  3. Slowly stir the dry ingredients into the wet ingredients until combined.
  4. Fold in 1 cup of blueberries.
  5. Pour the batter into a preheated waffle maker and cook according to manufacturer directions.
  6. Top waffles with the remaining fresh blueberries and drizzle with syrup.
