Doritos-Crusted Chicken Strips with Guacamole
Elevate your average nugget game with fried-to-perfection Doritos-crusted chicken strips with a side of guac.
Ingredients
- 3 avocados
- 1/2 red onion, chopped
- 2 tomatoes, chopped
- 1 Brazilian aji pepper, chopped
- 1/4 bunch cilantro, chopped
- 1/2 lime
- 1, 10 1/2-ounce bag Doritos
- 1 chicken breast, cut into strips
- Salt
- 1 cup wheat flour
- 1 tablespoon spicy paprika
- 1 tablespoon onion powder
- 2 eggs, lightly beaten
- Frying oil
Steps
- Cut the avocados, remove the pit (do not discard), remove the peel and chop into cubes.
- Arrange the chopped avocados in a bowl and add the onion, tomatoes, pepper, cilantro and juice of half a lime. Mix thoroughly, salt to taste, and set aside in the refrigerator. (Tip: Store the guacamole with the core inside to stop avocado from becoming dark.)
- Into a blender or food processor, add the Doritos. Crush into smaller pieces.
- Season the chicken with salt.
- In a bowl, combine the flour, paprika and onion powder.
- Dip the chicken pieces in wheat flour, then in the beaten eggs, and finally the crushed Doritos.
- Fry in hot oil until golden and crispy. Drain on paper towels.
- Serve with guacamole.
