Breakfast Quinoa Bowl With Fried Egg
Toast is so basic — enjoy your bacon and eggs with a superfood instead.
Ingredients
- 4 slices bacon, chopped
- 1/2 onion, sliced
- 1 cup quinoa, cooked
- 1 handful arugula
- 1 tablespoon olive oil
- 2 eggs
Steps
- Add bacon to a pan on medium-high heat and cook until golden brown and fat has rendered (4-6 minutes).
- Remove and set aside.
- Caramelize the onion in the same pan on medium-high heat for 4-6 minutes. Add the bacon back in.
- Fold in the quinoa to heat through for 1 minute.
- Portion the quinoa mix into bowls. Top with the arugula.
- Add oil to a small frying pan. Fry the two eggs then add to the top of the quinoa bowls.
- Crack open the yolks and enjoy!
