• 4 eggs
  • 1 cup sugar
  • 1 cup dark chocolate, melted
  • 1/2 cup flour
  • For the mousse:
  • 1 1/3 cups dark chocolate, melted
  • 4 eggs, divided
  • 1/2 cup heavy cream
  • For the assembly:
  • 8 ounces dulce de leche
  • 1/4 cup grated cocoa powder


  1. Preheat oven to 350 degrees. Butter and flour a round baking dish.
  2. For the brownie: In a mixing bowl, whisk eggs and sugar together. Whisk in melted chocolate, followed by flour. Pour mixture into prepared baking dish, and bake for 25 minutes. Remove and allow to cool. Once cool, remove from pan and spread dulce de leche on top of brownie layer.
  3. For the mousse: Combine the melted chocolate with the egg yolks. Add heavy cream and stir to combine. Whip egg whites until they reach stiff peaks, then fold into the chocolate mixture. Spread mousse on top of caramel layer. Top with cocoa powder.
