Bun Cha

Let Erwan show you how to put together this easy-to-make Vietnamese rice noodle dish.

Ingredients

  • Sausage:
  • ½ pound  ground pork
  • 1/2 red onion, minced
  • ½ red Thai chili, sliced
  • 4 garlic cloves, minced
  • 1 jalapeno, minced
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • ½ tsp sesame oil
  • Sauce:
  • 1/2 red chili, sliced
  • 1/3 cup of fish sauce
  • 3 tbsp of brown sugar
  • 1/4 cup of cane vinegar
  • Bowl:
  • Half a package of vermicelli noodles
  • 4 Fried wonton wrappers
  • 4 tbsp carrots, julienned
  • 4 tbsp cucumbers julienned
  • 4 tbsp peanuts, chopped
  • 1 bunch of mint
  • 1 bunch of Thai basil
  • 1 scallion, chopped

Steps

  1. In a large bowl, mix all the sausage ingredients together.  Form into oval patties. On medium-high heat on a grill pan, add sausage patties. Turn them every 2 mins, making sure they don’t burn, grill for about 10 mins.
  2. Meanwhile, mix all the sauce ingredients. Set aside. In a large bowl, add uncooked vermicelli noodles. Cover with boiling water and let sit for  5 minutes.
  3. To plate: In a large serving bowl add noodles. on top of noodles, add cooked sausages, carrots, cucumber, peanuts, mint, Thai basil, scallion, drizzle with sesame oil, and sauce. Top with a wonton wrapper. Serve
