Burger Bun Alternatives

Ingredients

  • Portobello Buns
  • 2 portobello mushroom caps
  • Olive oil
  • Salt & pepper to taste
  • Sweet Potato Buns
  • 1 large sweet potato
  • Olive oil
  • Salt and pepper to taste
  • Eggplant Buns
  • 1 large eggplant
  • Olive oil
  • Salt and pepper to taste
  • Cloud Buns
  • 3 eggs, yolks and whites separated
  • 3 tablespoons cream cheese, softened
  • 1/2 teaspoon cream of tartar

Steps

  1. Portobello Buns
  2. Trim stems from mushroom caps. Wipe clean with damp paper towel. Season with olive oil, salt and pepper. Grill both sides on medium-high heat, about 3-4 minutes. Serve with burger fixings of your choice.
  3. Sweet Potato Buns
  4. Preheat oven to 425°F. Slice sweet potato into thick slices, about 1/3 inch. Place on a parchment lined baking tray. Brush with olive oil and season with salt and pepper. Bake for 15 minutes, then remove from oven and flip. Bake again for another 15 minutes, or until cooked through. Serve with burger fixings of your choice.
  5. Eggplant Buns
  6. Slice eggplant into 3/4 inch slices. Brush with olive oil and season with salt and pepper. Grill both sides on medium-high heat for about 3-4 minutes. Serve with burger fixings of your choice.
  7. Cloud Buns
  8. Preheat oven to 300°F. In a bowl, combine egg yolks and cream cheese. In a mixing bowl, whip egg whites and cream of tartar into stiff peaks. Gently fold egg yolk mixture into the whites. On a parchment-lined baking tray, spoon and dollop the mixture into 4-6 even rounds. Bake for 25-30 minutes or until golden brown. Allow to cool for 5 minutes, before servings with burger fixings of your choice.
