Ingredients

Cilantro Lime Brown Rice

  • 2 cups cooked brown rice
  • 1 1/2 tablespoon freshly squeezed lime juice
  • 2 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon sea salt

Spicy Shrimp

  • 1 tablespoon olive oil
  • 1 pound shrimp, deveined & shelled
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon garlic powder

Bowl

  • 1 avocado, sliced
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup fire-roasted corn, thawed
  • Chopped cilantro, for garnish

Steps

Cilantro Lime Brown Rice

  1. Combine the ingredients in a large mixing bowl, then set aside.

Spicy Shrimp

  1. Heat olive oil over medium-high heat.
  2. Add the shrimp and seasonings.
  3. Cook, stirring occasionally, until shrimp is cooked through, about 4-5 minutes. Remove from heat.

Bowl

  1. Start with a base of the cilantro lime rice, followed by the cooked shrimp, sliced avocado, black beans, and corn.
  2. Add chopped cilantro to serve.

  • 2-3 leaves lettuce, thinly sliced
  • 1 lime wedge, for garnish

  1. Combine the ingredients in a large mixing bowl, then set aside.

Chicken & Fajita Peppers

  1. Heat olive oil over medium-high heat. Lightly season with sea salt and pepper.
  2. Cook chicken on both sides until cooked through, about 4-6 minutes per side. Remove chicken and allow to cool in order to slice.
  3. Add the bell peppers, onion, and seasonings.
  4. Cook, stirring occasionally, until peppers are mostly cooked through, about 4-6 minutes. Remove from heat.
